Spring onions, rhubarb
The fields are slowly waking up to the first warm rays of sunshine, and the spring onion is already stretching skywards. This veg is harvested when the bulb – the actual onion – begins to grow. Its tubular leaves are similar in flavour to leek; its mild-tasting bulb is perfect chopped and popped in a dip.

In addition to spring onions, rhubarb stalks are also now shooting out of the ground. However, unlike onions and many other vegetables (yes, rhubarb is botanically a veg), the rhubarb season is extremely short. The plant already heads into its dormant state at the end of June in order to preserve its strength again for next year.
