Apples, pears, plums

Autumn is apple harvest time. Early varieties are ripe for the picking in August, late varieties can be picked until the end of October.

Although apples usually remain juicy and crunchy long after leaving the tree, it is unavoidable that they will eventually taste floury. This is due to a natural process whereby the fruit continues to ripen and loose moisture after harvesting.

In order to keep apples fresh for as long as possible, therefore, you should always store them in a cool and dark place. If you don't have a cellar, you can store your apples in the vegetable box of your refrigerator. Be careful to keep them away from other fresh produce, however: Apples produce ethylene gas which speeds up the ripening process of other fruit and veg stored nearby.
