Brauerei Ferment

Out of love for Japanese soy sauce, we brew our soy sauce with care and passion according to the traditional Japanese art of brewing, using only Swiss organic ingredients of the highest quality (organic soybeans, organic wheat, salt, and water).

The unique taste comes from the slow breakdown of soybeans and wheat into countless aromatic compounds.

Steamed soybeans and roasted wheat are mixed with spores of a noble mould (Aspergillus oryzae). After two to three days, these are overgrown and permeated by the fungus (koji). Proteins and starch of the soybeans and wheat are broken down in this process and form the substrate for fermentation by bacteria and yeasts in brine (Moromi), which lasts one or more years. Brewed from whole soybeans (Japanese: Marudaizu), a unique, gentle, and delicate aroma is created - a harmonious quintet of sweetness, saltiness, bitterness, acidity, and umami.
