One person, brewer and scientist is fascinated by fermentation, ingredients, food applications and natural flavours. Maria Elena Cantos Soto works as a brewing instructor at the Feldschlösschen brewery (Carlsberg Group) and supports 3Bier, a local microbrewery in the canton of Aargau, with their brewing skills. She is also a food sensory panelist at the Faculty of Food Science at the University of Bern. However, it is in her kitchen lab and barn that she conducts most of her food experiments and makes her own black garlic.
