YamaSake was founded in 2020 by Oliver Weibel. The origin of Switzerland's first sake brewery goes way back to the deep 80s, when Oliver discovered his love for Japan through Japanese cuisine. Gradually, the idea matured to start a sake brewery in Switzerland using the very good Swiss spring water and as local and organic products as possible. After a study trip through the European sake breweries in 2016, they started their own koji and sake production on a small scale, thus laying the foundation for the later foundation.
