Stefan Kraus, Managing Director and Head Chef at the Rüsterei in Zurich, has been cooking with a passion for over 25 years. After completing his chef apprenticeship at the Wirtschaft zur Höhe in Zollikon, he was drawn to the mountains, as well as to other locales the length and breadth of Switzerland, where his talent quickly became apparent. In 2001, he worked for two years as chef de partie at the Grande Roche in South Africa, followed by a two-year stint at the St. Francois restaurant in Lausanne. After completing further training to become an instructor and sommelier ASSP, he took over the position of Head Chef at the Rüsterei in Zurich in 2005, and has been Managing Director there since 2018.
