The ZHAW is one of Switzerland's leading universities of applied sciences with campuses in Winterthur, Zurich and Wädenswil. In Wädenswil, the Institute for Food and Beverage Innovation (ILGI) covers the entire extended performance mandate of the universities of applied sciences, education, research, training and services, in the thematic field of food and beverage innovation and strives for a close connection between research and teaching. The institute can draw on more than 30 years of successful cooperation with the Swiss food industry as well as with authorities, agencies and research institutes.

Prof. Dr. Susanne Miescher Schwenninger, Dipl. Lebensmittel Ing. ETH, has been a lecturer at the ILGI since 2011 after many years at the ETH, where she heads the Food Biotechnology Research Group. Her team is working in depth on food fermentations and the discovery of new, functional starter cultures that contribute naturally to the production of healthy, safe and sustainable food. One focus of the research group is the post-harvest process of cocoa.
